October Recipe Of The Month

Gluten Free Granola

Craving that mid-day crunch? Granola can curb that craving in a heartbeat, BUT you have to be careful with granola. A lot the store bought brands may taste great, but have added sugar and other unnecessary ingredients in them. By making it yourself, you know EXACTLY what is in your granola and the best part… IT IS SUPER SIMPLE TO MAKE!!

INGREDIENTS:

  • 3 Cups Unsweetened Coconut Flakes
  • 1 1/2 Cups Sliced Almonds
  • 1 Cup Raw Pumpkin Seeds
  • 1/2 Cup Sesame Seeds
  • 1/2 Cup Raw Sunflower Seeds
  • 2 Tbsp. Chia Seeds
  • 3/4 Tsp. Kosher Salt (Optional)
  • 1/2 Tsp. Ground Cinnamon (If you like Cinnamon go ahead and use a full teaspoon or maybe more!!)
  • 1/2 Cup Honey
  • 2 Tbsp. Avocado Oil
  • 1 Tsp. Vanilla Extract

DIRECTIONS:

  1. Preheat oven to 300 degrees and line a baking sheet with parchment paper
  2. Toss ALL dry ingredients in a large mixing bowl
  3. Cook oil, honey, and vanilla in a small pot on medium heat for 1 minute. (Just enough for the honey to mix in well with the oil and vanilla)
  4. Pour liquid over coconut mixture and combine well
  5. Spread evenly on the baking sheet. (For more of granola clusters, I like to semi firmly pack down the granola)
  6. Bake for 25-30 minutes, stirring once halfway. (Again for clusters, I like to semi firmly pack down the granola)
  7. Remove granola from the oven and let it cool for 5 minutes. Then it’s time to ENJOY!
